What “local raw honey” means here

Our honey is connected to colonies managed in and around our Haymarket operation. “Raw” describes honey handled without the high-heat processing commonly used to create a highly uniform commercial product. Honey is still a food and should be stored and handled carefully.

Seasonal by nature

Virginia forage changes through spring, summer, and fall. Trees, garden plants, wildflowers, rainfall, and temperature all influence what bees can gather. Natural differences between batches are part of local honey.

Crystallization is normal

Crystals do not mean honey has spoiled. The balance of natural sugars and storage temperature affect how quickly a jar becomes cloudy, creamy, or firm. Gentle warming can return it to a more liquid texture.

Using and storing honey

Keep the lid closed and store honey at normal room temperature in a dry place. For crystallized honey, place the closed jar in warm—not boiling—water and allow it to warm gradually. Avoid overheating if you want to preserve the character of raw honey.

Honey works well in tea after it has cooled slightly, on toast, in dressings, or wherever a floral sweetness fits. Honey should never be given to an infant under 12 months old. It is a food, not a treatment or substitute for medical care.
